Bison meat was the staple of the Plains Peoples’ diet. They ate as much fresh meat as they needed and then dried the rest. This dried meat was sometimes mixed with bison fat to make pemmican, a mixture of meat and berries eaten on the trail. Bison blood was used in stews and soups.
